If you fancy having a go at making a basic Victoria sponge cake here's a tried and tested recipe that is one of Rachel's favourites:

8oz (200g) Self Raising Flour

8oz (200g) Baking Margarine or butter

8oz (200g) Caster Sugar

1 tsp Baking Powder

4 eggs

1tsp Vanilla essence

(Top tip: to make a chocolate cake add 1oz (25g) of cocoa powder to the above recipe and a splash of milk if the mixture seems too thick!)

  1. Preheat the oven to 180/ Gas mark 5.

  2. Grease your cake tins (2 x 8" round tins work well but any shape or size will be fine!)

  3. Weigh all the ingredients into a bowl

  4. Using an electric whisk beat them together until the mixture is smooth

  5. Pour/ scoop the mixture into your tins, leveling out the top with the back of a knife

  6. Bake for 20 minutes, if using a deeper tin the cake make take longer

  7. Test the cake is cooked by inserting a skewer or sharp knife into the middle- if it comes out clean then the cake is cooked

  8. Set aside to cool, after 10 minutes you can remove from the tin and place on a wire rack

  9. For a classic Victoria Sponge you can fill the centre with chopped strawberries and whipped double cream, or you can use jam or lemon curd with buttercream if you prefer!

  10. Enjoy a slice or 2!
